Why isn't it possible to choose the currency among those defined for the company? Use Timesheet Category for TS: what is it used for?

Rename the field Value in Amount. Check and review names of the several reference fields: Reference Number, Accounting Order, Order Row, Internal Order. Remove the report "Ricavi/Costi - report mensile". Remove ticket tab and options. Move Ticket Activity Templates tab to workflow management.
